Cum Laude, Latin for “with honors,” combines Montalcino’s historic Sangiovese Brunello clone with international grape varieties of Cabernet, Merlot, and Syrah. Each variety is vinified separately and aged 6-8 months to enhance its unique characteristics. e cuvée is then made and aged an additional 6-8 months. It is unfiltered to preserve its unique character. At least 6 months of bottle rest follows.
Cum Laude flanks two other Castello Banfi proprietary cuvées bearing Latin names, SummuS “the highest,” (Sangiovese, Cabernet Sauvignon and Syrah), and Excelsus, meaning “eminent,” (Cabernet Sauvignon and Merlot).
A perfect match for rustic bean soups, grilled meats, and aged cheeses.
